Cherry Almond Granola

1 lb rolled oats
4 oz coconut chips
2.5 oz sesame seeds
3 oz sunflower seeds
2.5 oz wheat germ
4.5 oz butter
4 oz brown sugar
½ cup honey
1/3 tsp. salt
2 tsp. vanilla
6 oz whole almonds
8 oz cherries

Heat oven to 350 degrees. Spread almonds on a sheet pan that holds them in a single layer and toast until they become fragrant and golden on the inside (about 7-8 minutes).

Combine butter, sugar, honey, and salt in a saucepan and bring to a boil. Remove from heat, add vanilla, and stir to combine.

In a large bowl, combine oats, coconut, seeds, and wheat germ. Pour the melted-butter-and-sugar mixture over grain mixture and mix to coat completely. Divide granola into several shallow pans at a depth of no more than about 1” each. Bake for about 15 minutes to begin with. Using a metal spatula, carefully toss the browned edges into the center and continue to bake for another 5 to 7 minutes. With the spatula, mix the edges into the center again. Continue baking and mixing until it is just about evenly golden. Mix in the almonds and cherries and give it about another 3 to 4 minutes in the oven to slightly coat them with syrup and grains. Cool completely before storing in airtight containers.
